Recipe: Veggie Coconut Curry

 

Ingredients

-1 tbsp coconut oil 

-1 onion diced

-4 cloves of minced garlic

-1-2  tbsp grated ginger

-½ cup sliced bell pepper

-½ cup diced carrots

-½ cup diced mushrooms

-¼ cup diced tomatoes

-⅓ cup loosely cut snow peas

-1 tbsp curry powder

-1 pinch of cayenne

-2 14-ounce cans of coco milk

-1 cup veggie broth

-salt and pepper

-option to serve over rice or quinoa 


Directions

-heat a large saucepan to medium heat, add coconut oi

-add onion to sauce pan

-once onion has softened, add garlic, ginger, salt and pepper, and all veggies except tomatoes and snowpeas. Stir for 10 minutes

-add curry powder, cayenne, veggie stock, coco milk, salt & pepper

-bring to a simmer and cover pan for 15-20 minutes

-add snowpeas and tomatoes in the last 5 minutes so they don’t overcook

-serve over quinoa or rice! Better the next day...
