Recipe: Ginger Soy-Sauce Meatballs

Ingredients 

-1 lb ground chicken

-1 tbsp soy sauce

-1 tbsp asian fish sauce

-zest of 1 lemon

-8 sprigs of lemon-thyme leaves 

-1 tbsp cilantro chopped

-½ tbsp of grated ginger

-1 clove of garlic, minced

-¼ cup grapeseed oil

-Handful of lettuce 

Directions 

-Heat a large pan over medium-high heat. Add grapeseed or canola oil.

-In a bowl, combine chicken, soy sauce, fish sauce, lemon zest, lemon-thyme leaves, cilantro, ginger, and garlic. Season with salt and pepper.

-Roll into 1-inch balls and place on frying pan. Pan fry until balls brown evenly on all sides. Season again with salt and pepper.

-Serve over a bed of lettuce!
