Recipe: Lemon Yogurt Cake

 

Ingredients 

-9 tablespoons of unsalted butter, at room temp

-1 cup and 2 tablespoons sugar

-3 large eggs

-1 ¼ cups of all purpose flour

-1 pinch of salt

-1 cup of Fage yogurt

-Zest of 3 lemons 

-1 tablespoon of baking powder 

-as much poppy seeds as you’d like

-1 apple, peeled and then grated (should make up ~1 cup)

-powdered sugar for serving 

Directions 

-heat the oven to 375. Thoroughly butter and flour a small bundt cake 

-cream the butter and sugar in a mixer until fluffy

-on the lowest speed add the eggs one at a time 

-slowly add the flour, salt, yogurt, lemon zest, baking powder, apple, and poppy

-pour batter into the pan and bake for 35-40 minutes (brown on top)

-serve WARM with powdered sugar and maybe whipped cream!
