Recipe: Blackberry Apple Crisp
Ingredients
-1 ¾ cup of flour
-1 ¾ cup of sugar
-1 tsp of sea salt
-3 tablespoons of cinnamon
-1 ¼ cup of unsalted butter, cut into 1 inch pieces
-1 ¼ cup of rolled oats
-2 pints of blackberries
-6-7 medium size apples, peeled, cored and sliced
-1 cup of heavy whipping cream
-Zest of two lemons
-1 tbsp of vanilla extract
Directions
-Preheat oven to 375 degrees. Butter a 9x13 inch baking dish.
-For the crisp topping, pulse 1 ½ cups of the flour, ¾ cup of sugar, and the salt in a food processor. Add 1 cup of the cubed butter and pulse in food processor until coarse (like big breadcrumbs). Add oats and pulse till combined. Put mixture in a bowl and set aside.
-For the fruit filling, combine the apple, blackberries, 1 ½ tablespoons of cinnamon, ¾ cup of sugar, and the remaining flour in a bowl.
-Spread the fruit filling into the buttered baking dish. Then use your fingers to cover the fruit with the oat/flour mixture. Now, take the remaining ¼ cup of butter and slice into very thin pieces. Place these pieces around the top of the uncooked crisp. Next, sprinkle the remainder of the sugar and cinnamon on top of the crisp.
-Bake for 30 minutes.
-While the crisp is baking, prepare the lemon whipped cream in the bowl of an electric mixer. Whisk together the heavy whipping cream, lemon zest, and vanilla extract until fluffy.
-Serve warm!
