Recipe: Lemon Agave Brussels Sprouts

Ingredients 

-2 pounds of brussels sprouts, halved lengthwise 

-8 sprigs of lemon-thyme leaves

-3 tbsps olive oil

-4 tbsps of agave 

-juice of 1-2 lemons (about ½ cup of juice)

-salt and pepper 

Directions 

-preheat oven to 400

-in a bowl, toss the brussels sprouts with 2 tbsps of the olive oil, ¼ cup of lemon juice, and season with salt and pepper. Add lemon thyme leaves. 

-Spread brussels sprouts onto a large rimmed baking sheet and roast for 30 mins (until crispy)

-In a bowl, whisk the agave, remaining tablespoon of olive oil, and remaining ¼ cup of lemon juice. Pour over brussels sprouts and serve warm!
