Recipe: Blueberry Cinnamon Pancakes

Ingredients 

-⅔ cup of cottage cheese 

-2 eggs 

-4 teaspoons of sugar 

-1 pinch of salt 

- ¼ cup plus 2 tablespoons of flour 

-1 teaspoon baking powder 

-½ cup of blueberries 

-2-3 tablespoons of cinnamon 

-butter, for frying pancakes 


Directions 

-heat a non stick skillet or griddle over medium heat with plenty of butter. 

-combine first the eggs, cottage cheese, salt and sugar and whisk till smooth. 

-next add flour, baking powder, and cinnamon. 

-pour ⅓ cup of batter onto the griddle, place blueberries, and let sit for 2-3 minutes before flipping 

-be sure to to re-butter the pan before each new pancake is made!
